We all know chefs start the revolutions that drive what consumers eat at home. But there are ways that growers and marketers can influence what chefs choose for restaurant menus.

Tomasz Wosiak is the executive chef for the TC Restaurant Group, renowned for putting country music stars in the restaurant business. The group’s signature place, Tequila Cowboy, has locations in four cities and its flagship store is featured in the ABC TV series “Nashville”.

The TC Group also operates numerous venues in the Nashville area including, Luke Bryan’s 32 Bridge Food + Drink, FGL (Florida-Georgia Line) House, Jason Aldean’s Kitchen + Rooftop Bar, Sun Diner, Luigi’s City Pizza, Crazy Town and Wanna B’s Karaoke Bar.

Chef Tomas was a featured speaker at the Southeast Produce Council Southern Innovations Expo in Nashville. We caught up with him after his presentation to find our more about what it’s like working with music legends to create authentic tastes — and how the industry can influence restaurant menu creation in a report that first aired on the RFD-TV Network’s Market Day Report.
